چکیده

Rheological measurements are quite relevant in the food industry as a tool for physical characterization of raw material prior to processing, for intermediate products during manufacturing, and for finished foods. There are several approaches to conduct these rheological characterizations, and the selected technique pretty much depend on the specific product and the functional characteristics in need to be analyzed. Several different types of equipments are available to scientists as a tool in food rheological studies leading to acceptable results in most design situations. This paper will focus on the review and discussion of some of the most relevant rheological tests of current interest to the food industry in selected examples, i.e. gels and emulsions. 2004 Elsevier Ltd. Rheological Challenges for the Food Industry

Several key challenges for rheologists working in the food industry are presented. These range from pure material science problems (complex yield behaviour, fracture mechanics of “soft” materials, interfacial rheology) and interactions with solid surfaces (wall slip) to the probably biggest challenge: the effects of rheology on processes inside the human body. Finally, the need for enhanced tea...

Effect of a functional food (vegetable soup) on blood rheology in patients with polycythemia

Objective: Key hemorheological variables are associated with several life-threatening diseases including cardio-cerebro-vascular diseases. A diet can influence the blood rheological variables. To compare the effectiveness of a vegetable soup on blood viscosity (BV), hematocrit (Hct), plasma fibrinogen, lipid profile, fasting blood sugar (FBS), and blood osmolarity in patients with polycythemia ...

Potential Evaluation and Optimization of Natural Biopolymers in Water-Based Drilling Mud

Drilling cost optimization has always been an important issue in the petroleum industry. In order to save costs and create new markets for local materials, Ofo (D. micocarpum) and food gum (C. populnea) powders were evaluated in this study at high temperature as alternative to imported chemical additives in water based drilling fluid. The base mud composed of alkali beneficiated local clay, ach...

Investigating the Effect of Polythin and Polydrill on the Properties of Drilling Fluids

In this study, synthetic sulfonated polymers were used in order to enhance the rheological properties of drilling fluids. The capability of these polymers in reducing the effects of environmentally friendly, but harmful, pollutants such as cement, calcium chloride, gypsum as well as pH changes were investigated. In the present work, two sulfonated synthetic polymers, namely Polythin and Polydri...
